MASTER COOKBOOK RECIPE # 34 DEVILED EGGS
Ingredients:
6 large eggs
2 Tbsp mayonnaise
1/4 tsp sugar
1/2 tsp yellow mustard
I/4 tsp black pepper
2 tsp sweet pickle juice
1 Tbsp sweet pickle relish, optional
Paprika

Instructions:
Bring water to a boil in a saucepan, then gently lower eggs into water with a spoon and boil for 12 minutes. Rinse under cold water. Add 2 cups of ice to the water. After 2 minutes, peel the eggs; the eggshells should come off easily. Slice eggs in half and remove yolks. Using a fork, mash yolks with mayonnaise, sugar, mustard, black pepper, pickle juice, and relish (if using). Spoon or pipe yolk mixture into egg whites. Sprinkle with paprika before serving.
Notes & Tips: If you are using fresh eggs, they are harder to peel. You can prick the large end with a
needle or a sharp, thin object before boiling. This will work great every time. There is no need to do this step if you have store-bought eggs.
Piping the filling makes for a neater presentation.
Lay the eggs sideways in the refrigerator 24 hours before boiling to center the yolk in the egg.
For extra tang, increase mustard.
Use dill pickle juice and relish instead of sweet pickles.
Use crumbled bacon and 1/2 tsp Hidden Valley Ranch seasoning while omitting pickle relish and juice.
Use chopped olives and olive juice in place of pickles.
